Song Zhong means the descendant of Song. According to the local beliefs some of the oldest tea trees of the area are direct descendant of trees grown during the Song dynasty nearly a 1000 years ago.

Song Zhong has large, slender leaves, which can take on stronger fermentation. This results in tea with fuller, headier body than most Dan Congs.

The forward, strong aroma of the leaves is one of the signature characters of this tea. It's honey sweet, lightly toasty, and mind blowingly fruity, as if we sniffed a fresh bowl of mixed berries. Who would think the flavour could compare? But it does. It's equally sweet and amazingly fruity, downright rivalling with a cup of berry juice. The aftertaste is fresh, clean and long lasting.

The tea is from the winter batch, harvested in October, that's where the name Xue Pian (snowflake) comes from. Snowflake oolongs are only lightly roasted, which makes their flavor deliciously fresh.

This tea is perfect for those who love the sweetest and fruitiest teas, who look for a substitution for those heavy juices and who want to focus. This tea fills you with an impressive lot of energy.

Short infusions are the best for Snowflake Song Zhong. Depending on how strong you like it, anything between 10 to 30 seconds works. Steep it longer, and the tea gets slightly astringent. Not disturbingly though.

How to prepare

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Fill your pot with tea leaves in a 3g/100ml ratio, pour boiling water on them and brew for 30 seconds.
STEP 3) Serve. Pour the tea into a pitcher, and then into cups.
STEP 4) Brew again.

❖ For the second infusion, steep it for about half the time of the first infusion. For every other infusion after that increase the steeping time (to about 35-40 seconds).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.
