The name 八仙 or Ba Xian refers to the eight Taoist immortals, a legendary group of saints in the Chinese Mythology, possessing powers of art and healing. The legends say that in the Song dynasty, there were 8 trees growing beside each other, and the "mother tree" of this varietal is one of those. Now only a few villages make Ba Xian on the slopes of Wudong mountain.

The fragrance is toasty-buttery with a ting of sour cherries. The tea is definitely a charisma. It is spicy, herbaceous and softly tannic with tropical fruit notes tagging along. It can be strong and punchy if brewed long, with lots of vibrant energies.

If you prefer milder, fruitier characters, make short, 10 second brews, and you will get a spicy, lightly astringent, fruity tea with the hint of gardenia notes in the background. If you need a quick and strong energy boost, and don't mind the more prominent tannic-spicy features, steep it longer.

The tea soup is brozy, outright telling the tale of its fascinating taste notes.

The tea is from the winter batch, harvested in October, that's where the name Xue Pian (snowflake) comes from. Snowflake oolongs are only lightly roasted, which makes their flavor deliciously fresh.

How to prepare

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Fill your pot with tea leaves in a 3g/100ml ratio, pour boiling water on them and brew for 10-20 seconds.
STEP 3) Serve. Pour the tea into a pitcher, and then into cups.
STEP 4) Brew again.

❖ This tea is best with short infusions. After the first few infusions you can increase the steeping time (to about 35-40 seconds).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.
