Description

Shizuoka Prefecture is renowned for its tea production, and Hamamatsu City is doubtless one reason why. It is there that, in lieu of any agricultural sprays or chemical fertilizers, tea is instead painstakingly fermented using black koji mold. This organically-driven fermentation process—controlled by microorganisms—includes natural components such as gallate, catechin and citric acid, to name a few. The process culminates in a sweet and deep-flavored tea possessing a pleasant floral aroma, a fragrant medley well worth the extra time and effort.

Excellent taste. After tasting many varieties of black tea (Yunnan), I recommend. Of course expensive but I dont know, maybe that's the way it is worth the price.
