This is the most popular and highest-quality white tea ever produced in Fuding, Zhenghe of Fujian Province from the year of 1880. In the process of its production, only top fluffy buds of leaf shoots from Da Bai cultivar are picked and dried after wilting and light fermentation. There is very little production of it. The fluffy tea leaves are shinny, reminiscent of silver and silver needles, so they are known as Silver Needle, and very popular with Westerners. This Baihao Yinzhen is produced from the organic leaves of cultivar of Fujian’s Da Bai cultivated in Fuding of Fujian Province. It has a fresh, mellow and refreshing taste, and refreshing fragrance as well.
It contains polyphenol with an antioxidant effect, the same effect of wine polyphenol, and it also has an antipyretic effect to remove extra heat from the body.
Recommendable is a glass teapot (a heat-resistant teapot) or a tea cup with a lid so the fragrance of Baihao Yinzhen can be enjoyed. It is also really enjoyable to see some beautiful leaves vertically floating up and down in the heat-resistant teapot.

How to prepare and enjoy:
How to prepare “Baihao Yinzhen”
1. Warm a glass teapot or gaiwan by pouring boiling water.
2. Put tea leaves of 3~4g into the pot per water of 150cc and pour boiling water to the pot at about
3. Warm a pitcher or a cup by pouring the remaining boiling water.
4. Steam it in about 1 minute to 3 minutes.
If the scum comes up on tea, take it off with the edge of the tea cover. No need to throw away the
tea to wash tea leaves. Steam it in shorter time (about 50 seconds) in second infusion because
tea leaves are already open after making cups of tea for the first time. After several infusions, taste of
tea is getting weak, so take ten seconds longer to steam for each cup in order to make some cups
of tea evenly.
5. Pour the tea into pitcher from a teapot first to make tea even, then pour it to the cups.
Make sure to open the lid of a teapot to prevent it from steaming too much.

Taste of tea is a matter of preference, so try infusing tea in several ways and find your
favorite way to infuse.

Another excellent tea from Sazen. Baihao Yinzhen is a very flavorful white tea. This tea is clear and clean with no dust or bits of leaf. It's color is golden like a glass of white wine or champagne and it's taste is very mellow. Good for three or four brews. The only reason I gave 4 stars instead of 5 is that I've had other excellent tasting white tea of this type at a significantly lower price. Overall this one from Sazen is top notch but it is also expensive. If you want a very clean tasting, mellow tea with uniform leaves and no bits mixed in this may be worth the price.
