Tea from Kōka, a city in south-eastern part of Shiga prefecture.
100% from Yabukita, Japan's most well-known tea variant.

After the tea leaves are picked, they are only steamed for 20 seconds, and then dried at 80℃ for 30 minutes. This short and gentle processing helps the leaves keeping their lush freshness.

A great balance of sweetness and astringency characterize this tea. The aftertaste is fresh and herbal.
While many shincha are soft green, this tea is golden, a typical shade for this varietal, also called as "Yamabukiiro" in Japanese.

1. Put 6 g of tea leaves into a Japanese teapot.
2. Cool boiled water down to 70℃ and pour it into the teapot.
3. Steep for 40 seconds and pour the equal amount of tea in each cup.

You can use the same tea leaves three times. Use hotter water at the second and the third time.
These used tea leaves should be immersed for a shorter time than the first.

The taste of tea is a matter of preference, so try infusing tea in several ways and find your favorite way to infuse.
