Tencha is a shaded green tea, this is the tea matcha is made of. Grown like gyokuro, it has a vivid green color, but its taste has a unique, soft smoothness to it. It is silky and light, but rich and flavorful. Unlike other Japanese green teas, after the steaming of the harvested tea leaves, they are not rolled.
It is sometimes used for cooking. Even just on top of rice, in a salad, or mixed in a dressing the flavor comes out deliciously.

Tencha Hatsumukashi can remind us of Gyokuro teas, but this is much lighter and is less full-bodied than they are. Its first brew is the most intense. It is sweet, light and pampering. Its Umami flavors are highlighted in the second brew, just as the initial sweet flavor is fading. Unobtrusive green tones can be detected, accompanying us from the background throughout the experience. Try the incredibly subtle flavors of the third brewing; next to the gentle and smooth tones, some bitter and astringent undertones can still be detected.

How to prepare

Put 5 g of tea leaves into the teapot.
1, Use 50ml of water at 50°C for the the first brew, with 3 minutes of steeping time.
2, Use 40ml of water at 65°C with 90 seconds steeping time.
3, For the third and final brewing, use 40ml of water at 80°C with 1 minute of steeping.
During brewing, it is advised to swirl the tea pot gently. This preparation helps the broader leaves to have ample contact with the modest amount of water.

What I can say to this tea? Superb, wonderful! At first brew, I can already feel the umami, vegetal taste of the tencha, followed by an aftertaste of pear. This tea last for five infusions, two of which are boiled using 100 degrees Celsius water. The best thing in this tencha is the cha qi. I can't explain it fully as words cannot convey the whole experience. But in brief, I'll you my experience: It's like after doing zazen in complete concentration, ichigyo zanmai. I will buy this tea again.
