I just had three bowls of this in a row, trying to figure out how to describe this tea, but it's a pretty tough nut to crack. The shop description is spot on. I tried rather hard to hunt for a word that wasn't "acrid", but that is indeed the best characterization for the type of bitterness in here. It hits right at the beginning, and you can almost feel it coating your mouth. After the bitterness comes a bit of sweetness, but it doesn't quite go in the sweet potato or toasty direction you might expect on a more robust usucha, instead, it hangs out a bit near melon, with greener flavors. Never obnoxiously grassy, but never quite friendly either. The finish is long. It's been 15 minutes and I can still taste most of the above. Aroma is not very strong, but fresh and pleasant. This is less of an everyday tea, and more of a statement. Recommended: - Drink it after some of the heavier or fruitier desserts. - Serve guests who are experienced drinkers of matcha. Not recommended: - Making it weak or with water that's hotter than 90C(195F), it retains the upfront bitterness but loses the other interesting aspects. - Serving large numbers of people or beginners.
