This tea offers a mixture of acrid, full-bodied and tart flavors. The taste is a transition between Shohaku and Zuishen no Shiro. A teasing tartness is still present in the tea, yet it has a more full-bodied, pronounced flavor than the Shohaku. It also features a discreet background bitterness, which subtly enhances its character.

The meaning of Tama no Shiro "珠の白" :
This tea was named in commemoration of the 60th Shikinen Sengu ceremony at Ise Jingu (Ise Grand Shrine).

How to prepare

STEP 1: Place 1.5–2 g (approx. ½ tsp or 2 chashaku (traditional tea scoop)) of matcha powder into a suitable tea bowl.
STEP 2: Pour 70 ml (2.4 fl oz) of 80°C (176°F) water over the powder.
STEP 3: Whisk (vigorously) with a chasen (tea whisk) until frothy.

❖ Warm the tea bowl with hot water first, then dry it thoroughly with a cloth. This helps maintain the ideal temperature and brings out the fresh aroma of the matcha.
❖ Sift the matcha powder through a fine strainer before use to prevent clumping (strongly recommended).
❖ Drink the matcha immediately after preparing it, as it may become more bitter as it cools.
❖ After opening the matcha packaging, consume all the tea within one month for the best experience.

I just had three bowls of this in a row, trying to figure out how to describe this tea, but it's a pretty tough nut to crack. The shop description is spot on. I tried rather hard to hunt for a word that wasn't "acrid", but that is indeed the best characterization for the type of bitterness in here. It hits right at the beginning, and you can almost feel it coating your mouth. After the bitterness comes a bit of sweetness, but it doesn't quite go in the sweet potato or toasty direction you might expect on a more robust usucha, instead, it hangs out a bit near melon, with greener flavors. Never obnoxiously grassy, but never quite friendly either. The finish is long. It's been 15 minutes and I can still taste most of the above. Aroma is not very strong, but fresh and pleasant. This is less of an everyday tea, and more of a statement. Recommended: - Drink it after some of the heavier or fruitier desserts. - Serve guests who are experienced drinkers of matcha. Not recommended: - Making it weak or with water that's hotter than 90C(195F), it retains the upfront bitterness but loses the other interesting aspects. - Serving large numbers of people or beginners.
