It's a very tricky sencha to brew, but it's very rewarding when done right. There's lots of potential to get a deep, dew-like grassy umami with a nice nuttiness and a buttery texture, and it's great when achieved. It never really gets TOO punishing, but these scales tip very easily in to "grass bomb" territory and a lush, deep grassy will overtake everything else and you'll be left with a deep grassy astringency that doesn't showcase this tea too well. I find the best way to brew this is .4g/10ml - STEEP 1 - 75C water, 30 seconds STEEP 2 - 80C water, 20 seconds STEEP 3 - 85C water, 20 seconds This makes for a great "ceremonial" tea of sorts. It doesn't require formality by any means, but it's very hard to enjoy this tea when your current focus isn't on tea. It requires attention and care when brewing, and if you provide this, the tea will reward you handsomely.

Excellent! This is a very fresh, clear and gorgeous blend. In the mouth it's medium-thick, oily, salivating, rich and dense flavour profile. Low astringency and bitterness, just enough to make it properly interesting. Medium umami of a sweet kind. Notes of black or darker sweet berries, pink florals like sakura leaves and sweet grass to keep the tea grounded to the earth. When sipping the aroma is instantaneously in the nose and lingers refreshingly long. Coats the mouth in a comforting oiliness. The cup is very fragrant too, easy to pick up smells even without concentrating. Complex enough and easy to drink. Lovely!

Brief (few seconds) steeps in 70 Celsius water. Liquor is an almost clear light yellow-green in look, but becomes more vibrant in hue by the 3rd infusion onwards. Taste is soft with an umami sweetness and a vegetal note. Wet leaves are freshly green, giving off a notable steamed seaweed in aroma. Flavor starts to mellow down by the 4th infusion. A longer steep (1 minute) in the next infusion gives a more pronounced vegetal note, though still mellow.

Excellent tea. Dry leaves smell a little bit like blackcurrant. Great balance between sweetness and oiliness. Taste stays on mouth for quite a while. Not too much of the veggie taste, more something between floral and fruity. Excellent balance quality-price. Hope we will have this product every year.
