How to prepare

STEP 1) Put 4g (0.8 US tsp, 2 teaspoon or 4 chashaku scoop) matcha powder into a suitable tea bowl.
STEP 2) Pour 30 ml (1 fl oz) 80℃ (176°F) water over the matcha powder.
STEP 3) Gently knead with a chasen (tea whisk) until all lumps are gone.

❖ Before Step 1, warm up the tea bowl with hot water, then dry it with a cloth to create the perfect temperature so make the most delicious matcha with a fresh scent while preparing. (Optional)
❖ To prevent clotting of the matcha powder, sift it through a fine strainer before use. (Strongly recommended)
❖ After the matcha is done, drink it immediately, because as it cools down it gets more and more bitter. (Recommended)
❖ Freshness is the most important thing for the enjoyment of Matcha. It is best to use up the tea within one month of opening. (Strongly recommended)

I agree with the other reviews this is an amazing and delicious matcha. I drink it as Usucha. This matcha tantalizes all of the senses: The color is a beautiful deep green. The scent is reminiscent of corn and is fresh. The taste is gentle but not washed out. There is definitely a lot of umami there. The aftertaste is a gentle and lingering aftertaste that is sweet and it almost feels like its tickling your tongue. I thoroughly enjoyed this matcha and am ready to buy more. It really is THAT GOOD! Yum!

Choko no Mukashi is a shining brilliant example of excellent Uji ceremonial matcha. Every single step is a whole experience in its own right. Upon opening the tin, I was greeted with an amazing scent that reminded me of cacao. Whisking this produced some of the most vividly green foam I have seen so far from any other past matcha I’ve had. The moment I had my very first sip, I tasted an undeniable sweetness that reminded me of sweet corn, which was followed by a pleasant marine umami that is comparable to nori or kombu. This is without a doubt, one of the best ceremonial matcha that I have come across and deserves a place among my top ten.

I've been making this with 2 big scoops in 60ml at ~175F. First off it's excellent. Overall a pretty unique brew. Has what may be the best expression of umami of any tea I've had. Not weighty like gyokuro and not as airy as sencha. More like kombu / miso broth but flowing into green sweetness which attenuates a very pleasant not-quite-bitter bite on the edge. It's very forgiving as well. It nearly overwhelms but comes down at the end and doesn't cloy or pucker. Has enough heft to sit on an empty stomach just fine. Leaves a vaporous tingle in the throat and a powerful electricity in the fingers. Good green apple chi.

One of the most expensive Matcha's I have had the pleasure of drinking. Absolutely delicious and I'd planned to ration this to special occasions due to price. Unfortunately, it became my daily Matcha and 30g didn't last very long! Lovely flavour, deep and rich and sweet. I occasionally take Maple syrup as an added bonus with my Matcha, but not with this one. I plan to buy again and will try not to drink it everyday but it will be difficult not to.
