Asian pigeonwings powder
This brilliant blue powder is made of butterfly-pea flowers. The flavor is subtle and mellow and a tiny bit toasty like freshly baked potatoes. Its flavor in drinks is gentle, not at all overpowering but it adds a magical touch to any cocktail, lemodane or even tea. Mixed with acidic ingredients it turns into a stunning deep purple color.
With its mild flavor, it pairs perfectly with rice, adding a touch of glam to any meal. (For the perfect skyblue hue, add 1/2 tsp butterfly pea powder to 150 g (1 go) rice. If you add less, the color will be softer, if more - about 1 tbs to 150 g rice - it will turn a deeper cobalt blue.)

INGREDIENTS
■ 1/2 tsp / 1–2 g Butterfly-pea Powder
■ 6.7 fl. oz / 200 ml Hot Milk
■ Sugar or sweetener to taste
STEPS
1) Measure the Butterfly-pea Powder into a bowl.
2) Pour a little milk over it and whisk it well.
3) Add the rest of the milk and froth it.
Finally sweeten to taste.
