A smooth and gentle tea, the first brew highlights the delicate notes of white tea. In the second brew, the flavor evolves into a spicier, more complex blend, with the honeyed sweetness of white tea merging with floral rose notes. As the tea develops, smoky undertones begin to emerge, adding a charismatic, edgy quality to the overall profile.
❤︎ Flavor notes of the Black&Rose Heart Tea Cake
The first brew highlights floral rose notes, with the black tea flavors still not present. In the second brew, the sweet, caramel-like notes of black tea come forward, and the subsequent brews offer a smooth, balanced blend of these floral and sweet black tea flavors.
Both mini tea cakes are quite forgiving, remaining smooth and not becoming bitter even if left in the water longer than recommended. The tea cake doesn't fully open in the first brew, but begins to unfurl completely starting with the second brew.

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Put the mini tea cake in your vessel, pour boiling water on them, and brew for 45 seconds. (No need for rinsing the leaves before the first brew.)
STEP 3) Serve. Pour the tea into a pitcher, and then into cups.
STEP 4) Brew again.
❖ For the second infusion, steep it for about half the time of the first infusion. For every other infusion after that increase the steeping time (to about 50-60 seconds).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.
