Kunpu no Shiro from Horii Shichimeien is a fresh, green Usucha tea, with a particularly exciting flavor. Brewed correctly at 80 degrees, this tea reminds us of a blend of Sencha and Gyokuro flavors with a gentle bitter undertone and rich flavor. It is worth experimenting with this tea since when brewed at 70 degrees, or when we prepare it as a thicker tea, its boldness, and creaminess can be significantly increased. It is advisable not to make this tea too thin because then its flavor would be dampened, and then only the bitter tones would dominate the taste.

Sold only in shincha season, from the middle of May to the end of July.

The meaning of Kunpu no Shiro "薫風の白" :
“Kunpu” is a gentle breeze that carries the alluring scent of young, fresh green leaves in the warm days of early summer. (for an explanation of the usage of "mukashi" and "shiro", please refer to the general notes)

◆The general notes of the usage of "mukashi" and "shiro":
The expressions "Mukashi" and "Shiro" at the end of tea names have a grading connotation and are used to distinguish between thick and thin teas, respectively.
Only "Mukashi" was likely to have been used originally, with the expression "Shiro” coming into use later on.

"Mukashi" is said to be a combination of the Chinese characters for "twenty" (廿) and "day" (日). Crucially, March 20th (廿日) of the lunar calendar is when it was said that the very best tea is picked.

"Shiro" became common during the reign of the third shogun, Tokugawa Iemitsu, and is said to have originated when the feudal lords of the time actively asked Uji tea masters to make their tea “thin" or "light". It is not clear what the expression “shiro" specifically meant at that time, but it is thought to have referred to the differences in taste, as records show that Furuta Oribe preferred dark green tea while Kobori Enshu preferred it to be lighter.
Perhaps the difference between 'dark' and 'light' tea can also be explained by the difference in the preparation methods of the tea in Uji.

Other theories as to the origins of the words “mukashi" and “shiro" exist, but it can be said with reasonable confidence that the word “mukashi" has been used since ancient times, with the word “shiro" coming into use from the Edo period onwards. Later generation tea masters then replaced the traditional word “mukashi" with the term “shiro," both of which had previously been used to describe the grades of the tea, and made it commonplace.

In any case, it is not totally clear how the times and changes in the history of the tea ceremony could have affected the meaning of “shiro" or "mukashi". However, they are words that reflect the trends and changes of the times and have been carried over to the present day.

How to prepare

Warm up tea bowl with hot water, then dry it with a cloth.
Sift 2g (0.4 US tsp, 1 teaspoon or 2 chashaku scoop) matcha powder into warm and dry tea bowl.
Pour 70 ml 80℃ (176°F) water over the matcha powder.
Whisk with a chasen (tea whisk) until foamy.

Freshness is the most important thing for the enjoyment of Matcha. Drink it fast, before it cools.
Please adjust the amounts and temperature in accordance with your preferences.

I didn't think I would ever rate matcha in this way, but its aroma is amazing and I would say that's the biggest strength of this matcha. As soon as you open the tin the aroma spreads almost throughout the room and you can feel as if you are in the middle of grass that has been freshly cut. It is extremely pleasant. I don't want to take away from the attention to the taste of this matcha, as this one also deserves appreciation. I would say the flavour is a mix of grassy and nutty notes with a gentle bitter undertone.

How do I describe this. The initial aroma is like fresh green peas or raw garbanzo beans. The body is like a neutral clay you might smell while making pottery. There is a striking nutty note while you mix it that goes away as you drink it. The taste is incredibly satisfying and rich. I made it at 80C with two scoops from the bamboo spoon. The only thing I didn't like about it was the packaging - it comes in a bag inside the can, so you end up spilling some of the product trying to get it out of there. But honestly, it must be the best matcha I've ever tasted.

As the name suggests, this is meant to be enjoyed as usucha. Aroma is freshly green grass in the morning meadow with slight toasty notes. Usucha has warm aroma with greenish umami, there is notable bitter undertone which I love and ends with sweet, cooling, long finish. I tried to push it to koicha and the result is surprisingly good. It's sharpness is somehow subdued, mellow sweet taste and super long cool finish. Great blending which resembles the experience of Shincha.

Yummy, yummy, yummy!! I never had Shincha matcha until now & so I didn't have any expectation....but WOW...my mind was blown. Right when I open the bag, I was hit with fresh green, grassy aroma that I've never experienced before (even with ceremonial). The aroma grew stronger as I whisked it in my chawan. The taste was absolutely delicious as well--sweet, grassy, creamy in texture, without any trace of bitterness. Love that the flavor lingers a long time in your palate as well. What a treat!

I prepared this as usucha, as this matcha is meant to be, given the name ("shiro"). This "first harvest" matcha has a much different and lovely aroma. It makes me think of a field of shincha. While whisking some interesting tangy notes hit my nose. It has such a smooth taste and just the right amount of umami. I would definitely recommend this while it is in season and definitely recommend buying from Sazen - they make exceptional brands of uji matcha available to the world.
