Uji matcha tea for making usucha (thin tea)
A bold but pleasant usucha tea offering an experience of fresh, tender, green flavors together with a hint of astringency and a touch of creaminess. Use 80-85°C water to prepare the tea, as more astringent flavors become dominant at lower temperatures.
The meaning of Matsukaze "松風" :
The compound "Matsukaze" is made up of "pine" and "wind" respectively. During tea ceremonies, the sound of the boiling water in the tea kettle is likened to the wind blowing through a pine forest.

As Usucha:
STEP 1) Put 2g (0.4 US tsp, 1 teaspoon or 2 chashaku scoop) matcha powder into a suitable tea bowl.
STEP 2) Pour 70 ml (2.4 fl oz) 80℃ (176°F) water over the matcha powder.
STEP 3) Whisk with a chasen (tea whisk) until foamy.
As Koicha:
STEP 1) Put 4g (0.8 US tsp, 2 teaspoon or 4 chashaku scoop) matcha powder into a suitable tea bowl.
STEP 2) Pour 30 ml (1 fl oz) 80℃ (176°F) water over the matcha powder.
STEP 3) Gently knead with a chasen (tea whisk) until all lumps are gone.
❖ Before Step 1, warm up the tea bowl with hot water, then dry it with a cloth to create the perfect temperature so make the most delicious matcha with a fresh scent while preparing. (Optional)
❖ To prevent clotting of the matcha powder, sift it through a fine strainer before use. (Strongly recommended)
❖ After the matcha is done, drink it immediately, because as it cools down it gets more and more bitter. (Recommended)
❖ Freshness is the most important thing for the enjoyment of Matcha. It is best to use up the tea within one month of opening. (Strongly recommended)

Slightly astringent and bitter taste as a thin tea. It is best as a matcha latte ! So refreshing and light. You can still taste the creaminess. For the price, I have nothing to complain about. Better than expected !!!!

Despite it being the lowest in the Yamasa Koyamaen matchas, it's still very delicious. Less smooth than the others it's a little bit astringent at the end but the flavour is still rich and very umami.

To me, this matcha tasted bold and packs quite the punch. It leans more bitter, so I wouldn't drink it on it's own as usucha, but it pairs well with a milk! It has an appealing coffee-like bitterness, with some seedy-savory, nutty notes as well. Was not overly seaweedy either. Color was very green and not dull whatsoever. With milk, the bitterness is toned down a lot but the most of the other flavors still come through. For the price, this matcha blew me away and I hope I can try it again sometime.

This matcha tastes amazing! has that signature astringency, but its much more subtle compared to most other matcha's I've tried. The astringency gently lingers on my tongue without it being overpowering, creating a really smooth and satisfying finish. Considering the cost and he quality of the flavor this matcha is amazing! I would repurchase

Slightly bitter, the slightest umami, and somewhat astringent, i think this is good for beginners. Although this matcha is supposed to be more bitter under colder temperatures, i still enjoy this one cold whisked with milk, although it is slightly more grainy than other matchas i've tried. I would get this one again if it comes back in stock!

Very pleasant, mild, foams nicely, I got a little bit of a floral taste. Very enjoyable at this price point and quite a surprise. I use a nesspresso frother to heat and mix in the morning and this did not clump at all.

It was a "wow" experience to me. Its fresh and dark green, not as vivid. Smells like sweet and dry wheatspike. The taste was a surprise to me. Its like heavy roasted pumpkin seed with some dry hay and hint of "roasted-umami" taste(a bit like hojicha, but just really-really bit). Both aromas are dominant in taste and in the smell, if you are using more tea, it will be a bit bitter. Its good but i miss the balance in the taste. Fine sieving is recommended because it can be really clumsy. If i like to compare to Koyamaens Aoarashi, the prise its the same the taste and smell is completely other world. The Aoarashi is fresh, sweet and grassy with light body, the Matsukaze is in smell sweet and the taste is really nutty with stronger body. Absolutely recommended for this prise!

My go to matcha, for everyday use, in fact I enjoy a chawan of it every morning. Smooth taste with grassy and sweetish pastry notes, creamy froth and good finish. I use 80C water. Also a very forgiving tea to work with if you're a beginner in making usucha.
