Mitsuko Karigane Hōjicha is a very pleasant, very balanced tea. It is remarkably aromatic, in the scent the toasty-nutty notes are taking the lead, but while the almondy flavor is forward, the tea soup is a nice harmony of the sweet and the toasty. The tea is slightly creamy, reminding of a mug of fresh coffee. It has a lasting, steady aroma throughout both infusions, and it offers a truly relaxing, comforting tea experience.

Mitsukō Karigane Hōjicha is first flush tea stems plucked in Asamiya and Tsuchiyama in Shiga Prefecture. It is roasted twice. First on its own in an oven, and then a second time with sand. After the roasting, the leaves are ventilated and sifted to remove all the sand. Sand helps distribute the heat evenly, which makes the flavor steady and balanced.

This hōjicha is very permissive. If you steep it with less water, the flavor will turn a little denser, with more water a little gentler, but either way, it will never get bitter.

Thanks to the deep roasting, hōjicha is low in caffeine and gentle to the stomach. It is ideal for the elderly and children as well.

STEP 1) Fill your pot with tea leaves in a 6g/200-250ml ratio. STEP 2) Cool boiled water down to 95℃ (203ºF), pour it on the leaves and brew for 30 seconds.
STEP 3) Serve. Pour an equal amount of tea into into the cups.
STEP 4) Brew again.
