Karigane tea (or kukicha) made of tea leaves and tea stems mixed together. It contains more vitamin C than other types of green tea and has a mildly bitter, slightly creamy taste. Uji Karigane is made of Sencha, when the tea bushes are exposed to direct sunlight, that is why its taste has characteristic refreshing flavor with a nice ‘green’ aftertaste.

How to prepare

1. Put 5g (1 tsp ) of Karigane into a Japanese teapot.
2. Cool boiled water down to 80℃ (176ºF) and pour it (200cc) into the teapot.
3. Steap for 30 seconds and pour the equal amount of tea in each cup.
The same tea leaves can be used three times. Use hotter water for the second and third infusion.
Used tea leaves should be immersed for a shorter time.

The taste of tea is a matter of preference, so try infusing tea in several ways and find your favorite taste.

This is such a versatile green tea. My favorite way to drink it now is to first steep the leaves as directed and enjoy as hot tea. Then for additional steeps, use cold water for a pleasant and refreshing brew.
