Green Tea from Sichuan Province, China, 2022
During the Qin Dynasty Meng Ding Shi Hua was noted as one of the 10 Most Famous Chinese Green Teas, and even today it is celebrated among the bests.
This tea is harvested on the Meng Ding Mountain, on an over 1000 meter altitude. Shi Hua stands for "stone flower" in Chinese. The mountain used to host several temples, monks living here were the firsts making this tea. The peak of Meng Ding is almost always covered in mist. Summer is cool here, while winter is warm, making it a perfect environment for growing tea.
Meng Ding Shi Hua is strongly fruity, fresh red berries and berry jam is steaming from the clean jade green liquor. The flavor is sweet and mellow with the notes of dried goji berry and lychee spiced up with the savory notes of roasted nuts. It comes with a sweet and sour after taste, slightly pinching the tongue with its refreshing astringency.
An interesting fact that 3 g of this tea is made of approximately 300 buds.

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Fill your pot with tea leaves in a 3g/100ml ratio, pour boiling water on them and brew for 30 seconds.
STEP 3) Serve. Pour the tea into a pitcher, and then into cups.
STEP 4) Brew again.
❖ For the second infusion, steep it for about 5-10 seconds. For every other infusion after that increase the steeping time (to about 35-40 seconds).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.
