Very delicious tea between koicha (thick tea) and usucha (thin tea) grade
Houki is a deliciously full-bodied koicha tea, rich in flavors and magical aromas offering an unforgettable experience. Its taste lingers in the mouth long after consumption. It is primarily a koicha tea, yet it’s also delicious as a usucha. It tolerates lower temperature water well, and is not prone to turning bitter. It is a more full-bodied and sweeter tea compared to the Koun, next on our list.
The meaning of Houki "宝亀" :
This tea's name has been given as a prayer for a long life blessed with wealth.
The Chinese character「宝」 (read here as “hou”) has the meaning of something owned which is precious and treasured, while「亀」(read as “ki” in this compound) is the character for “turtle”. Turtles are considered as auspicious creatures due to their long lives giving them appeal as a symbol of longevity. In fact, there is a saying that while a crane signifies 1,000 years, a turtle represents 10,000.

As Usucha:

As Koicha:
STEP 1) Put 4g (0.8 US tsp, 2 teaspoon or 4 chashaku scoop) matcha powder into a suitable tea bowl.
STEP 2) Pour 30 ml (1 fl oz) 80℃ (176°F) water over the matcha powder.

❖ Before Step 1, warm up the tea bowl with hot water, then dry it with a cloth to create the perfect temperature so make the most delicious matcha with a fresh scent while preparing. (Optional)
❖ To prevent clotting of the matcha powder, sift it through a fine strainer before use. (Strongly recommended)
❖ After the matcha is done, drink it immediately, because as it cools down it gets more and more bitter. (Recommended)
❖ Freshness is the most important thing for the enjoyment of Matcha. It is best to use up the tea within one month of opening. (Strongly recommended)
