Sweet and fruity premium white tea speciality from Fujian Province, China
Bai Mudan (White Peony) is made from the leaves of the Da Bai or Shui Xian cultivars grown in Jianyang, Fujian. The tea is harvested as one bud with one or two leaves. Because the soft, white, downy leaves resemble peony petals, it was named Bai Mudan, meaning “White Peony.” It is also known as the “three-white” tea, referring to the white, fluffy buds and young leaves used in picking.
The leaves are first withered in sunlight and indoors, then dried. A final heat treatment is applied using hot air or radiant heat.
Like Baihao Yinzhen, Bai Mudan is known for its cooling (antipyretic) properties.
This Bai Mudan is made from organically grown Fuding Da Bai leaves cultivated in Fuding, Fujian Province.
TASTE NOTES
This tea opens with an aroma of peanuts and gentle floral sweetness. In the first infusions, the sweetness carries into the cup, with a soft, cake-like character and a sweet-tart quality. Notes of apple pie and dried figs stand out, with a subtle fermented, jam-like depth underneath. The sweetness is natural and mellow, similar to fruit compote.
As the brews progress, the tea becomes brighter and fresher, showing green apple notes and a light green character. The finish is clean and refreshing, making this a revitalizing and uplifting tea.

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Rinse the tea leaves. Fill your pot with tea leaves in a 3g/100ml ratio, pour boiling water on it and empty it right away. Rinsing should be as quick as possible.
STEP 3) Brew. Pour boiling water on the tea leaves and brew for 30 seconds.
STEP 4) Serve. Pour the tea into a pitcher, and then into cups.
STEP 5) Brew again.
❖ For the second infusion, steep it for about half the time of the first infusion. For every other infusion after that increase the steeping time (from the time of the first infusion).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.
