Fuding Baihao Yinzhen

Silver needle white tea from Fujian Province, China

Fuding Baihao Yinzhen Fuding Baihao Yinzhen Fuding Baihao Yinzhen Fuding Baihao Yinzhen Fuding Baihao Yinzhen Fuding Baihao Yinzhen

Silver Needle (Baihao Yinzhen) is the most renowned and highest-quality white tea produced in Fuding and Zhenghe, Fujian Province, with a history dating back to 1880. Only the finest, downy buds from the Da Bai cultivar are carefully hand-picked for its production. After harvesting, the buds are gently wilted and lightly fermented, then naturally dried, resulting in an extremely limited yield.

The tea buds are covered with delicate white fuzz and display a silvery sheen, resembling slender silver needles—hence the name Silver Needle. This Baihao Yinzhen is crafted from organically grown Da Bai cultivar tea plants cultivated in Fuding, Fujian Province.

TASTING NOTES
A lightly sweet, honeyed, floral white tea with muscat notes. It is light, smooth, and refreshing. The fresh floral flavors linger long after drinking. This white tea stands out for its soft, silky texture and gentle taste.

Brewing suggestions:
Bao Hao Yinzhen has beautiful leaves, and watching them slowly open is a true delight. You can use glassware to fully appreciate their elegance.

30 sec.~

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Brew (no need to rinse this tea). Pour hot water on the tea leaves (about 85°C) and brew for 30 seconds.
STEP 4) Serve. Pour the tea into a pitcher, and then into cups.
STEP 5) Brew again.

❖ For the second infusion, steep it for about half the time of the first infusion. For every other infusion after that increase the steeping time (from the time of the first infusion).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.

Another excellent tea from Sazen. Baihao Yinzhen is a very flavorful white tea. This tea is clear and clean with no dust or bits of leaf. It's color is golden like a glass of white wine or champagne and it's taste is very mellow. Good for three or four brews. The only reason I gave 4 stars instead of 5 is that I've had other excellent tasting white tea of this type at a significantly lower price. Overall this one from Sazen is top notch but it is also expensive. If you want a very clean tasting, mellow tea with uniform leaves and no bits mixed in this may be worth the price.
