Shan Lin Xi is in the central mountain in Taiwan, the hight of which is 1600-1800 meters. Shan Lin Xi is well known for its mountain tea, along with Li Shan Cha. Qing Xin Oolong is closely associated with this area, so the local production of Jin Xuan has scarcity value. Because of the nature of the soil of Shan Lin Xi, the taste of this tea is mild.
Its thick leaves are proof of rich nutrients.
The sweet milky taste of Jin Xuan in winter, which was picked in November 2018, is captivatingly superb.

TASTING NOTES
A creamily soft, floral-scented, light tea with an aftertaste dominated by milky, sweet flavors. Ideally prepared after a brief rinse, starting with 95-degree Celsius water and 30-second infusions, gradually increasing the time of re-steeping.

How to prepare

STEP 1) Put the tea leaves into the pot. Pour hot water over it for a few seconds, then pour it into the cups, then pour it all out. (This opens the leaves up while also pre-heats the tea utensils.)
STEP 2) Pour water over the leaves.
STEP 3) Steam it for required time.
STEP 4) Pour the tea into a pitcher, then into the cups to serve.

❖ For the second infusion, steep it for about half the time of the first infusion. For every other infusion after that increase the steeping time (from the time of the first infusion).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from steaming too much.

Taste of tea is a matter of preference, so try infusing tea in several ways and find your
favorite way to infuse.
