Buckwheat tea or Sobacha is a full-bodied, very sweet, and toasty-nutty beverage made of buckwheat grains. The caramel and oat meal notes make it both comforting and fun. Hot in winter and cold in summer, Sobacha is a very popular Japanese herb tea.

Since it is caffeine free, it makes a great drink any time for all ages.

The regular consumption of buckwheat tea may have several health benefits. It is believed to regulate blood pressure and stimulate blood circulation. It is also known for its powerful antioxidant properties.

It is delicious as it is, but some people like it as a cocktail, blended with whiskey or shōchū.

How to prepare

Hot sobacha:
STEP 1) Warm your teapot. (Optional)
STEP 2) Fill your pot with sobacha in a 3g/200ml ratio.
STEP 3) Pour hot water (95°C) into the teapot, and brew for 30 seconds.
STEP 4) Pour the tea into the cups, and serve.
STEP 5) Brew again. The same tea leaves can be infused three times. For the second and third infusions, steep for a shorter time.

Chilled sobacha:
STEP 1) Fill your large teapot or bottle with sobacha in a 15g/1000ml ratio.
STEP 2) Pour hot water (95°C) into your vessel and let the tea cool down.
STEP 3) Put the cooled sobacha into the fridge and chill. The grains can stay in the vessel or they can be removed. Either way, the tea will not get bitter.
STEP 4) Serve with ice.
