Verdant and refreshing gyokuro from Kanbayashi Shunsho
This gyokuro is medium-bodied and well-balanced, with vibrant green notes playing the main role. Its sweetness adds a smooth layer to the profile. From the second brew, there is a lingering, mild bitterness, making the gyokuro refreshing.

HOW TO PREPARE
Gyokuro Zuigyoku
The tea goes three delicious steeps. For the first brew, use 60 ml (2 fl oz) 40℃ (104°F) water and steep for about 2 minutes. For the next two brews, shorten the steeping time to 1 minute but do not use much hotter water. Water at 45℃ brings out the sweetness and flavor of the gyokuro without releasing much bitterness.
Sencha Tsurezure
Sazen's recommendation:
Kanbayashi Shunsho's sencha are on the lighter and greener side. To keep the sweetness well-balanced with the refreshing bitterness of green tea, use 5g tea leaves and brew with 180 ml (6 fl oz) 70℃ (158°F) water for 40 seconds. For the second brew, shorten the steeping time to 10 seconds.
Kanbayashi Shunsho's recommendation:
Use 8-10g tea leaves and brew with 180 ml (6 fl oz) 70-85℃ (158-185°F) water for 1 minute.

1. Put 8-10 g of tea leaves into a Japanese teapot.
2. Cool boiled water down to 40℃ and pour it into the teapot.
3. Steep for 120 seconds and pour an equal amount of tea into each cup.
The same tea leaves can be used three times. Use hotter water for the second and third infusions.
This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the best.
