This Alishan You Che Liao High Mountain Tea was produced in Meishan Township, Chiayi County, Taiwan. You Che Liao is a bit different than other Alishan tea growing areas, the oolong tea from there has a unique fragrance. Along with the characteristic fresh taste of high altitude mountain teas this tea has the sweetness of Alishan that comes from the fermentation. The layered, long lasting, sweet aftertaste makes it a really special tea you'll want to drink again and again.

TASTING NOTES
A floral, silky smooth, sweet tea. Its aroma is reminiscent of lilacs, whilst the tea itself radiates the freshness of spring. After swallowing, it leaves a moist, slightly creamy sensation in your mouth. An extremely refreshing, light and elegant tea. Ideally prepared after a brief rinse, starting with 95-degree Celsius water and 30-second infusions, gradually increasing the time of re-steeping.

How to prepare

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Rinse. Put the tea leaves in your vessel, pour hot water over them and then discard the water quickly. This step is for "waking the leaves" a little bit.
STEP 3) Brew. Pour boiling water on your rinsed tea leaves and brew for 30 seconds.
STEP 4) Serve. Pour the tea into a pitcher, and then into cups.
STEP 5) Brew again.

❖ After the first few infusions, you can increase the steeping time (to about 35-40 seconds).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.

This is a really nice floral oolong. Smells of purple and yellow florals, deep complexity. Thick, silky mouthfeel. Aroma lingers for a long time. There are notes of milk, butter and bake here as well which shows in a light umami. The liquor colour is a nice, vibrant yellow. Leaves look great, very intact. They are strong and hardy and can take many steeps before they run out of juice. I steeped in 90ml gaiwan, spent 5g of leaf per session and ran with boiling water.
