Thanks to the Phoenix Mountains' volcanic soil, humid and cool slopes, its oolongs are very fragrant, unique, floral-fruity teas, clearly distinct from those of any other areas.

1. 杏仁香 Xin Ren Xiang - "Almond Aroma Dancong"
Fragrance: almonds, chocolate, dried fruits, sweet toast
Flavour: candied almonds, faint floral notes, woodsy, earthy undertones with fresh, smokey - grassy aftertaste

2. 姜花香 Jiang Hua Xiang - "Ginger Flower Aroma Dancong"
Aroma: wild berries, custard, sweet toast
Flavour: fruity - spicy, berries, ginger

3. 茉莉花香 Mo Li Hua Xiang - "Jasmine Aroma Dancong"
Fragrance: fresh tobacco, jasmine flower, dried fruits, earthy notes
Flavor: strong floral notes, jasmine flower, smokey undertones

4. 玉蘭香 Yu Lan Xiang - "Magnolia Aroma Dancong"
Fragrance: sweet prune jam, dried plums, pickled fruits, vanilla
Flavor: sweet and fresh with strong pickled fruity notes and floral - fresh aftertaste
(Our advice: go for short steeps, 15-20 seconds and add a bit more water, about 120-150 ml)

5. 老叢黄枝香 Lao Cong Huan Zhi Xiang - "Yellow Gardenia Aroma Dancong" from a 200 y.o. tea tree
Fragrance: dried fruits, raisins, sweet toast
Flavor: citrus fruits, gardenia, with dominant tropical fruity aftertaste

6. 夜来香 Ye Lai Xiang - "Tuberose Aroma Dancong"
Fragrance: roasted almonds, trail nuts, with the earthy, sour scent of wet fallen leaves
Flavor: very harmonic, honey sweet tea with the notes of lychee and tuberose

7. 肉桂香 Rou Gui Xiang - "Cinnamon Aroma Dancong"
Fragrance: sweet - spicy with the notes of aniseed, dried plums and a hint of vanilla and cinnamon
Flavor: balanced and round, slightly floral tea with the hint of vanilla with fresh and grassy aftertaste

8. 李仔平蜜蘭香 Li Zai Ping Mi Lan Xiang - "Honey Orchid Aroma Dancong"
Fragrance: nectary sweet, flower honey
Flavor: dominant, tropical fruity aftertaste

9. 桂花香 Gui Hua Xiang - "Osmanthus Aroma Dancong"
Fragrance: dominant sweet notes of caramel and apricot with citrusy, earthy notes in the background
Flavor: nectary sweet tea with the notes of honey, apricot, and osmanthus flower main notes and faintly sour background notes

How to prepare

STEP 1) Warm your teapot
Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Rinse
Fill your pot with tea leaves in a 5 g / 120 ml ratio, pour boiling water on them and discard the water right away. (You can skip this step, and make the first infusion a little longer, about 30 sec.)
STEP 3) Brew
Pour boiling water on the tea leaves again and brew for 20 seconds.
STEP 3) Serve
Pour the tea into a pitcher, and then into cups.
STEP 4) Brew again

❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.

All 12 teas in this Dancong sampler were excellent or better. The suggested brewing method resulted in tea too weak for my taste so instead I used 5 grams, 150ml, 194F and 90 to 120 seconds for all 12 samples. I got at least 4 infusions from each. I used only Japanese glazed clay and porcelain tea pots, no unglazed clay. The Seiji Ushirode Kyusu I purchased from Sazen was used for most of the samples and it gave great results. I'm glad I bought 2 of these samplers, they are well worth the price!
