A rare green tea from Anji County, Huzhou City, Zhejiang Province. Huang Jin Ya is prized for its golden-tipped buds and beautiful appearance.
This cultivar is known for its high amino acid content, giving it a unique advantage when processed as green tea. It displays the famous “Three Yellows” quality: bright golden-yellow dry leaves, pale yellow liquor, and fresh yellow steeped leaves. The aroma is rich and lasting, often featuring notes of chestnut and orchid, while the taste is clear and refreshing with a gentle sweetness.

TASTE NOTES
A floral and verdant green tea, as refreshing as an early spring breeze. Smooth and vibrant, it is not only delicious, but with its bright golden leaves, also a pleasure to behold.

The dry leaves have a sweet, freshly roasted almond fragrance. When brewed, the liquor is shiny and luminous, evoking a fresh breeze.
The taste is pleasantly almondy with refreshing green notes and a soft, sunny sweetness that continues across infusions. It has an almost yellow-tea-like gentleness, being clean, balanced, and very pleasing.
Highly recommended using a gaiwan with 90°C water and short steeps to highlight its long, needle-like leaves.

How to prepare

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Fill your pot with tea leaves in a 3g/120ml ratio, pour boiling water on them and brew for 20 seconds.
STEP 3) Serve. Pour the tea into a pitcher, and then into cups.
STEP 4) Brew again.

❖ For the second infusion, steep it for about 5-10 seconds. For every other infusion after that increase the steeping time (to about 35-40 seconds).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the most.
