Shunmei cultivar green tea with pleasant umami, sweetness, and refreshing green notes
This kabuse tea comes from shaded tea fields, has a deep green color, and carries with it the signature, fresh “kabuse-ka” (covered) aroma. By covering the tea plants with shade nets, sunlight is reduced, and richer umami and sweetness are brought about due to higher amino acid content.
The cultivar it comes from is Shunmei, an early-harvest cultivar registered in 1988, known for its deep green color, fine shape, and excellent aroma-flavor balance.
When warmed in the kyusu, the dry leaves release a rich, creamy aroma with a deep green color.
The first brew offers strong umami, gentle kabusecha sweetness, notes of raisin and dried plum, and a refreshing marine (nori-like) character.
A pleasant green aftertaste lingers beautifully.
The second brew maintains sweetness with only light bitterness.
Best brewed at lower temperatures (around 60-70°C) to fully highlight its natural sweetness and enjoyable covered aroma.

1. Put 6 g of tea leaves into a Japanese teapot.
2. Cool boiled water down to 60℃ and pour it(150ml) into the teapot.
3. Brew for about 60 seconds and pour an equal amount of tea into each cup.
You can use the same tea leaves twice. For the second brew, use 65°C water and brew for 15 seconds.
This is how we recommend brewing this tea, but we all have our preferences, so try experimenting to find the way you like it the best.
