Thanks to the Phoenix Mountains' volcanic soil, humid and cool slopes, its oolongs are very fragrant, unique, floral-fruity teas, clearly distinct from those of any other areas.
About the varietal:
Jiang Hua Xiang means “Ginger Flower Aroma" and is a well-known varietal of Phoenix Dancong oolong tea. This tea is famous for its distinctive sweet and spicy ginger flower fragrance and flavor.
Taste notes:
When you first smell the dry leaves, you notice a sweet and fruity fragrance — like dried fruits, gooseberries, and melon. It’s gentle and mouthwatering.
This tea is truly beautiful, complex and elegant. You can taste its complexity in the way the flavors build on top of each other.
At first, it tastes very sweet, like honey. But quickly, you’ll notice a playful twist of papaya and dried mango, bringing in tropical warmth. Then comes something surprising: a fresh, crisp note of cherries in the background. It gives a light, refreshing contrast.
As the tea lingers, a soft spiciness appears. There’s a gentle warmth, like ginger and ginger blossom which gave the tea its name.
Finally, the experience deepens. A floral, herbal note arrives, reminding you of chrysanthemum blossoms.
All these flavors are layered so beautifully, one over the other. This is a tea to enjoy slowly — sweet, fruity, fresh, spicy, and floral — all in one elegant cup.
Brewing tips:
This Dancong is a high-grade, premium tea, and its quality shows in how it handles longer infusions. We recommend 45 seconds brewing time but even with extended brewing, it stays smooth and doesn’t turn bitter.

How to prepare

STEP 1) Warm your teapot. Pour boiling water into a gaiwan or teapot, let it sit for a little while, then discard all the water.
STEP 2) Fill your pot with tea leaves in a 3g/100ml ratio, pour boiling water on them and brew for 45 seconds (no need for rinsing).
STEP 3) Serve. Pour the tea into a pitcher, and then into cups.
STEP 4) Brew again.
❖ For the second infusion, steep it for about half the time of the first infusion. For every other infusion after that increase the steeping time (to about 45 seconds).
❖ Make sure to open the lid of the teapot between infusions, to prevent the leaves from cooking.
❖ This is how we recommend brewing this tea, but we all have our own preferences, so try experimenting to find the way you like it the most.
